Horsepower Energy Bars

These energy bars are very easy to make and they taste so good. You can vary the ingredients to suit your tastes or to work with what you have on hand. Some folks might like the addition of chocolate chips, dates or other dried fruit, or even beans. No kidding, beans, like mashed pintos.

About the only thing you can do wrong is to overbake them. Keep an eye on the corners of the pan and pull them out of the oven when they start to brown.

Cream together in a mixer:

1/3 cup butter or shortening
1/2 cup sugar
1/3 cup peanut butter
2 eggs
1/2 cup molasses

Mix together in a separate bowl:

1-3/4 cups flour
1/4 cup wheat germ
1 cup nuts, chopped
1/2 tsp ginger
1/2 tsp salt
1/2 tsp baking soda
1-1/2 tsp baking powder

Disolve 1/2 cup powdered milk in 1/2 cup water

Slowly add part of the dry mixture to that in the mixer and mix slowly. Add half of the milk and mix. Add more dry mixture and then the milk and continue until the mixture is combined well.

While mixing add:

1-1/2 cups raisins, chopped (a food processor works well)
3 cups oatmeal
Mix until combined well. Press into a greased 9 X 13 baking pan. Bake at 350 degrees for about 25 minutes. Be careful not to overbake.
